요약

미각은 사람의 생명을 유지하는데 가장 중요한 화학적 감각으로 단맛, 짠맛, 신맛, 쓴맛의 4가지 또는 감칠맛 을 추가하여 5가지 기본 맛이 있다고 알려져 있다. 이 중, 단맛과 감칠맛은 에너지가 풍부한 물질을 받아들임으로 써 생명 활동을 담당하는데 매우 중요한 기능을 하며, 쓴 맛은 섭취하는 음식 속에 포함된 유해 물질들에 대한 거부 반응을 일으킴으로써, 해로운 물질을 섭취하지 않도록 보 호 작용을 담당한다.
