요약

지방질은 구조적 특징상 그 포화정도에 따라 saturated fatty acid, mono unsaturated fatty acid, polyunsaturated fatty acid 의 3종류가 있 으며 이중 polyunsaturated fatty acid는 모든 물질의 세포내 대사의 중간조직인 세포막의 중요 구성성분이고 혈관의 수축과 이완등에 작용하는 prostaglandin 합성의 전구물질 즉 phospholipid의 필수 구성성분으로서 생채내 합성이 되지 않는 필수지방산으로 바다생선이 나 식물성기름 등으로 섭취된다.
